Observation (CORRECTED DURING INSPECTION): REPEAT: Raw beef being defrosted in two large red tubs on floor with a hose in preparation area beside the dish area.
Corrective Action(s): All raw meat was washed and removed from the red tubs and placed under running water in the preparation sink. The hose was removed and sanitized with bleach. As stated on previous inspection to prevent the cross contamination of food:
All frozen foods are to be defrosted 1. under running cold water in a preparation sink that provides an adequate air gap or 2. defrosted in cooler at a temperature of 4 C or below.

Observation (CORRECTED DURING INSPECTION): REPEAT: Raw beef observed stored in two large red bins on the floor with contaminated beef water flowing on to kitchen floor.
Corrective Action(s): As stated in previous report, food is to be defrosted under cold running water in the preparation sink or defrosted in walk-in cooler. A adequate air gap is to be present between dispensing water and food to prevent cross contamination of food and potable water.

Observation: Rodent droppings observed on floor under shelving in the storage area.
Corrective Action(s): Contact pest control company to inspect the premises for pests. Clean and sanitize all areas with bleach where all droppings are located. Ensure staff wears gloves and a mask before removing rodent droppings.
To prevent the entry of pests:
1. Seal any gaps or holes larger than 1/4 inch
2. Keep food stored in pest proof containers
3. Maintain premises in sanitary condition

Observations During Inspection:
- No cooked potentially hazardous foods observed stored at room temperature
- Low temperature dishwashing achieving 50 ppm chlorine at plate level
- Hand sinks stocked with hot/cold water, soap, and paper towel
- In use rice scoops stored in ice water

Corrections Needed:
- Temperature records are to be kept of all cold holding and hot holding units to ensure foods are maintained below 4 C or above 60 C at all times.
