Follow up to routine inspection conducted on March 27, 2024. A rinse residual of 100 ppm chlorine was detected at the utensil surface for the low temperature dishwasher (tested over multiple cycles). Operator had changed the sanitizer jug. Areas affected by mouse droppings were cleaned and sanitized yesterday. Holes/gaps were sealed with steel wool at the time of inspection. Note: New holes/gaps observed after moving equipment at the time of inspection. Ensure these are properly sealed and located/seal other holes/gaps in a way that prevents pest entry.
