Sanitizer spray bottle 0 ppm Quat. Sanitizer compartment of sinks 0 ppm Quat Wiping cloth sanitizer reservoir 0 ppm Quat. Knife magnetic strip - soiled with food debris, keys stored with knives. Knives on magetic strip all covered with food debris. Corrective Action(s): Quat feeder repaired - dispensing 200 ppm Quat. Spray bottle, wiping rag reservoir and 3rd compartment sink refilled with 200 ppm Quat sanitizer. Knife strip cleaned and sanitized. Soiled knives removed and place in sinks for dishwashing. Keys removed from knife strip. Note: sanitizer test strips to be available at all times, all staff to be trained how to use test strips. Violation Score: 15
