*High-temperature dishwasher has been replaced. Unit on site during inspection reached a final sanitizing rinse temperature of > 71 C at the plate level. Ensure dishwasher rinse temperature is monitored on a daily basis, and that the unit is serviced if final rinse falls below this level (thermometer on unit should read 82 C or higher for manifold temperature).
*Ice machine has been cleaned. Very slight mould accumulation noticed behind cube tray area - ensure this is cleaned by the end of today (28th February 2018).
*Utensils in clean condition in clean storage areas.
*No single-use containers observed in dirty/used condition.
*Slicer has been properly cleaned and sanitized.
*Bags of grain products stored outside bulk bins.
*Note: correction order is still in effect. Ensure terms of order are followed. Contact area inspector if there are any questions regarding this issue.
