- Oven has been fixed such that pipes connected to it are no longer leaking. No pooling water noted on kitchen floors.
- Ventilation canopy has been professionally cleaned - good. No grease debris build-up noted on canopy at this time. *Ensure ventilation canopy baffles are cleaned at least once a week.
- Food-contact surface sanitizer available in bucket at slightly greater than 200 ppm (chlorine bleach). Reminder to mix only 1 oz of bleach with 1 gallon of water for proper concentrations, and change this solution every 4 hours or sooner if solution becomes visibly cloudy/dirty.
- Hand sink was unobstructed and properly supplied at time of inspection - good.
- Manager demonstrated how to take apart the vegetable slicer for cleaning and sanitizing. Good. Ensure this slicer is fully cleaned and sanitized after each use (manager stated slicer is used once a day).
- Wooden fixture for mounting the vegetable slicer has been finished with paint - OK.
