The following is needed as part of the written food handling procedures: 1) The procedure for filling out this time tracking sheet. The time when the pizzas will be marked on the tracking sheet. Please describe this process. 2) The corrective action to take should the pizzas not be sold within 2 hours. 3) Describe whether or not you mix the pizza slices together. Remember, moving 2 beef slices to another tray with pizzas will affect the time tracking system as the tray it is moved on to will have a different time.
