A routine inspection was completed:
- Coolers 4C or colder; freezers -10C or colders; hot holding units above 60C; theremometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in 3-comp sink had 200ppm strength, good.
- Bleach sanitizer in cloth buckets had [Cl2] of 100ppm, good.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor.
- No expired foods in use or for sale FIFO rules being followed.
- FoodSafe certified, or equivalent course, staff present.
- General sanitation level is good. Improvement seen in this area since last inspection.
- No signs of pests.
- All surfaces are in good working order, durable, smooth, level, and easily cleanable.
- All action items from the previous inspection have been corrected. Grout has been installed on the floor in front of the dishwashing sinks; a new hanging freezer (storing chicken products) has been installed; and a new gasket installed on the McCafe milk dispenser.
ACTION:
- The walk-in-freezer floor has accumulated food and debris on the floor under the plastic platforms. Lift up the plastic platforms and sweep up the debris on a regular basis. |
