Met with Bill, Manager, on site:

- Hand wash sinks fully equipped with hot/cold running water, liquid soap and paper towel

Temperature checks:
- Walk-in cooler (tomatoes) 4C
- All freezers at -18C or below
- Hot holding at 60C or above
- Prep cooler at 4C or below
- All units are equipped with thermometer
- Daily temperature logs - they were up to date for May, however, please ensure to keep all records for minimum 3 months

Sanitation and Maintenance:
- High temp dishwasher surface temperature 71C
- Dry storage well organized
NOTE: Ice machine - please ensure to clean the ice machine frequently in order to prevent any build-up.
- Surface sanitizer - bleach at 100ppm
- Pest control company in place - No sign of pest activity at the time of inspection

Administrative:
- Valid operating permit posted in a visible location
- Staff have FoodSafe training.

Recommendations:
- Include the cleaning schedules and frequency of the ice machine cleaning / sanitation.
