302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): At the time of inspection, no sanitizer solution was available on site for sanitation of food contact surfaces such as food prep tables. Staff prepared bleach solution during inspection and the concentration was measured at 200ppm.
Corrective Action(s): Ensure that a food safe sanitizer is available on site at all times during operational hours in order to adequately clean and sanitize the food contact surfaces and prevent any risk of food contamination.
Store wiping clothes in the sanitizer bucket when not in use.

Observation: In the second building, 3 lights were missing shield covers.
Corrective Action(s): Ensure that the lights are properly shielded with covers to prevent any risk of physical contamination of food from glass breakage.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Multiple food containers were left uncovered in walk-in cooler. Staff covered the containers at the time of inspection.
2. Small scoops with no handles were left inside the flour bins. Staff moved them to dishwashing area.
3. 2 x bags of chick pea flour were stored directly on the floor. Staff moved them to proper shelving area.
Corrective Action(s): Ensure that the food is stored, handled or prepared in a way that prevents the risk of food contamination.
1. Always cover the food with proper lids or food grade wraps.
2. Use scoops with proper handles and always store the scoops outside in a sanitary manner.
3. Store food at least 6" off the floor.

304 - Premises not free of pests [s. 26(a)]
Observation: Few mouse droppings were observed in the corners and along wall of sweets storage room.
Corrective Action(s): Remove the mouse droppings and disinfect the area with 1 part bleach to 9 part water solution. Use proper PPE during cleaning. Discuss the issue with your Pest Control Company.

Observation: 1. Sugar syrup spill was observed on floor of both walk-in coolers.
2. A build-up of dirt/grease/food debris was observed in the following areas:
- Along walls and corners of the facility (both buildings)
- In both walk-in coolers
- Vents of kitchen hood
- Behind cooking line
- Behind dough flattener in dry storage area
Corrective Action(s): Ensure that the facility in maintained in good sanitary condition. Focus on the abovementioned area and remove any build up debris.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Walk-in cooler (x2) measured at 4C or less
- Upright freezer at -18C
- 1 door stainless steel freezer at -20C
- Front cooler at 4C
- Front freezer at -16C

Storage:
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- 200 ppm bleach solution was observed in 3rd sink of 3-compartment dishwashing sink.
- High temp mechanical dishwasher reached 76C at dish surface during rinse cycle.
- Utensils and tongs were found in sanitary condition.
- Washroom maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.
