Observation: Due to high volume, food products being stored where they normally wouldn't be stored:
- noted trays of sweets adjacent to non food items (dusty fans)
- huge buckets of gulab jamun & rasgulla found stored outside - ambient temperature 12-13C
Corrective Action(s): Be extra diligent on a special event day like today. Watch for routes of contamination that you wouldn't normally have to worry about during normal production volumes.

Note: Diwali temporary permit hand delivered at time of inspection. Tent set up is as per approved application. Temporary hand wash station has a built in water basin with foot pump and waste water storage.
***Do not throw dirty water down the storm drains! Use plumbed in sanitary sewer only.
***Ensure a food grade sanitizer (diluted bleach or quats) is used for general wipe up around the event tables
Regular inspection:
Hand sink, 2 comp, and 3 compartment sinks supplied with liquid soap, paper towels, hot/cold running water
***Take extra care to enforce regular hand washing due to the extra number of staff and increased volume during Diwali
Dishwasher reached 75C on second rinse cycle. Good
Kitchen walk in cooler 5C (in use)
Back walk in cooler 2C
New standing freezers ranged from -13C to -17C
Front display cooler operating around 1C at condenser level - heavily in use at time of inspection
General sanitation of facility - due to heavy use, extra people, and an increased product stock, sanitation was not accurately assessed
No new evidence of rodents
