Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Observation 1: Quats sanitizer dispensed at 50ppm at janitorial sink (mops sink). Quats spray bottles tested at 50ppm. A concentration of 200ppm quat sanitize food contact surfaces to achieve effective reduction in pathogens.
Observation 2: Meat slicer showed debris behind the blades indication a lack of thorough cleaning and sanitizing. Meat slicers have been implicated in outbreaks such as those involving Listeriosis.)
