Observation (CORRECTED DURING INSPECTION): Observed a knife stored under a countertop oven.
Corrective Action(s): Required to store knife on a clean plate above the oven if requires storage. Must wash and sanitize all utensils regularly through the dishwasher

Hot and cold running water available at all sinks
All coolers at 4 C or lower

Low temperature dishwasher working in good working order; measured 50ppm of residual chlorine with a test strip
Chlorine sanitizer on site and in use; measured 100ppm of residual chlorine with test strip. Cleaning cloth are inside the bucket.
Single use items are not being used anymore. Good.
Food products are being cooled in smaller portions than before. Good.
**In the process of adding extra space for employee. Removed sitting area that they rarely use and extending the cashier area out. Also installing a new hand sink. Required operator to submit the floor plan for approval prior to making any changes and contact the city for proper plumbing. They proposed to makes changes in the serving area only. Kitchen is not going to change. Discussed the current status and correct procedures with owner's daughter**
