204 - Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)] Observation (CORRECTED DURING INSPECTION): Noted soup in hot holding unit at approx 48C. Operator said they turn up the temp in the hot holding unit to heat up the soup. Corrective Action(s): Hot holding units are not intended to heat up or 'cook' foods. Ensure soup is heated up properly in the microwave to 74C (small portions, stir to ensure even heating..etc). Use probe thermometer to verify. Ensure hot holding unit is preheated before transferring hot food into it. Hot foods are intended to be maintained at 60C or higher in the hot holding units. Violation Score: 5

Comments

-Hand wash stations equipped with soap, paper towel, hot and cold running water -100 ppm chlorine sanitizer solution available in spray bottle. Single use paper towel used to wipe. -All cooler 4C or less (sandwich prep, open display, 1 door undercounter,.. etc) -Chest freezer -18 deg. C -High temperature dish washer achieved 71C (as per thermolabel) -General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection. - Gelato freezer with dipper well not in use. Operator plans to remove. Old ice machine has been removed from premises and will be replaced with a new one. - Sandwiches, soups and desserts come in premade and appear to be from approved sources.
