Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Ice machine has mould growth in the icemaking components. Mould may contaminate the ice. [Date to be corrected by: immediately]
Correction: Empty the ice machine and discard the ice. Clean the ice machine throughly: 1. soap and water 2. rinse 3. 100 ppm bleach sanitizer (1/2 teaspoon bleach in 1 L of water). Clean ice machine every 1-2 months to prevent the growth of mould.
Comments

A follow-up inspection was conducted, the following items were observed:
Ice machine was given a thorough clean.
Cloths are stored in the bleach bucket at 200 ppm.
Cleaning underneath the cooktops took place and across from the cooking area. *Note: There is still some more cleaning that must occur underneath the cooking equipment, especially close to the wall. As well, please clean above the equipment where there is caked on grease (grease is a fire hazard and a pest attractant). Clean these areas frequently to prevent build-up of debris and grease. Furthermore, any tinfoil used in the premise must be changed DAILY.
