Observation (CORRECTED DURING INSPECTION): Chicken strips stored in the hot holding trays measured with an internal food product temperature of 46C. Operator stated the strips were cooked in less than 1 hour.
Corrective Action(s): Reheat the chicken strips to an internal food product temperature of 74C. Adjust the temperature switch on the hot holding unit to ensure 60C or above is maintianed for all hot potentially hazardous food.
