Observation (CORRECTED DURING INSPECTION): Pizza holding times were not being monitored - Board stated that all pizzas were to be discarded at noon; however, pizzas had recently been placed into holding unit
Corrective Action(s): You MUST keep track of when the pizzas are going into the holding case - this is a condition of keeping pizza at room temperature. Pizza may only sit in case for 2 hours.

Pizza tracking board was updated at time of inspection.

If this is observed in the future, pizza will be discarded if time has expired according to the board.

Observation (CORRECTED DURING INSPECTION): 1. Wiping cloths observed on the counter
2. No sanitize prepared at time of inspection
3. cutting utensils required washing & sanitized and the timer was not in use at time of inspection
Corrective Action(s): 1. Ensure wiping cloths are stored in sanitizer when not in use
2. Ensure that a sanitizer is available at all times (i.e. 100ppm Cl)
3. Ensure timer for in-use utensils is in use to track when utensils must be washed and sanitized
