A routine inspection was completed:
- Bar coolers 4C; assembly cooler 4C; upright cooler storing pickled radish 3C; walk-in-cooler 3C; upright, cook-line freezer -16C; walk-in freezers -18C; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had [Cl2] of 100ppm.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] between 100-200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- Storage areas are clean and organized.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good, improvement seen from previous inspection. Keep up the good work!!!
- Exhaust canopies and filters have minimal grease. Last professional service was done in December 2024, next service due in June 2025 (as per service sticker).
- FoodSafe certified staff present, or they possess an equivalent (recognized) certificate.
- Removal of broken and/or unused equipment in the front kitchen has made it easier for staff to clean, and has removed areas where mice can hide.
- No signs of mice seen. Snap traps and tin can traps found in premises.
- Holes have been blocked in walls and around pipes.
- Door guards have been installed on the base of exterior doors to prevent the entry of mice.

ACTION
Health permit decal has expired. Pay the yearly health permit fees ($250.00) to renew your permit decal, invoices have been mailed out.
Make a new bleach and water sanitizer solution every 2nd day, as the strength of the bleach lowers each day. Mix 1tsp of bleach with 500mL of water.
