Comments

The following corrective actions were taken to address issues identified at routine inspection:
- Line cooler was repaired/serviced. Temperature of unit was 4C. Ensure temperature is monitored and corrective action taken if not within required range.
- Area where mouse droppings were noted have been cleaned and no additional droppings were noted at time of inspection. Continue to monitor for any further rodent activity.
- Floor in dry storage area and shelving in sushi preparation area have been cleaned.
- Manager reported thermometers for coolers have been ordered; however, not yet received. Manager to provide confirmation by email once thermometers are received/in place in coolers.
- Page of menu with raw oyster has been reprinted to include raw oyster advisory. Viewed at time of inspection. Service staff reported new page to be inserted in menu today.

Pending issue:
- Code 306: Exterior of reach in freezers (upstairs) still requires cleaning. Manager reported this will be completed today.

Reviewed inspection observations and pending corrective actions to be completed with Manager and a copy of the report was provided.
