Observation (CORRECTED DURING INSPECTION): Internal temperature of soup in the soup warmer registered 54 C at the time of inspection. Soup warmer was being used without water.
Corrective Action(s): Ensure that soups are always maintained at or above 60 C.

Observation: Improvement noted overall in terms of mice infestation in the kitchen and dry storage areas, however, a number of mice droppings were still noticed under the cabinets and storage shelving in the bar area, behind the deep freezers in the washroom alley and in the sky blue painted cabinets near the servery.
Corrective Action(s): 1. Clean thorouhgly all of the affected areas as discussed to remove all droppings followed by disinfecting surfaces with 1:10 bleach solution.( By April 8, 2022)
2. Ensure to rodent-proof these areas by finishing the undercabinet spaces to make them easy to clean and smooth. Filll any gaps in the floor wall junctions.
3. Continue to use mice traps, glue traps and practice diligent cleaning practices. Ensure to clean up after any food or beverage spills.
4. All food items must be stored off the floor to allow for easy cleaning and detection of mice issues.
5. Area underneath the dishwashing line and double sink requires special attention for cleaning efforts.
