Observation (CORRECTED DURING INSPECTION): No sanitizer step used during the day for food contact surfaces and meat slicer.
Corrective Action(s): Ensure all food contact surfaces are cleaned and then sanitized every 4 hours or when surfaces become contaminated or between food products.

Observation: 1.Cardboard pieces used to line shelves in prep area and on shelf with coffee cups in coffee station.
2. Paper towel dispenser not designed to hold paper towel rolls.
Corrective Action(s): 1. Ensure all cardboard is removed and if liners are required then the material must be smooth, durable, easy to clean and non-absorbent. Remove/replace cardboard.

2. Ensure the proper paper towel dispenser is in place for the appropriate paper towel roll. Install a simple paper towel roll holder to secure the paper towel roll in place at the handsink.
