Comments

- General sanitation of premises satisfactory. Minor food debris/particles noted under prep table. Ensure hard to reach areas are cleaned regularly.
- Handsinks supplied with hot and cold water, liquid soap and paper towel. Observed frequent handwashing by staff
- Coolers and cold holding units were operating at acceptable temperatures (4C or colder):
- 2 door stainless cooler 3C
- Line cooler 3C
- Undercounter cooler 4C
- Milk/cream dispenser (left) 3C
- Milk/cream dispenser (right) 4C
- Food stored in a manner to prevent contamination. Wrapped/covered.
- Walk-in freezer was -14C
- Hot holding temperatures of potentially hazardous foods was acceptable (60C or higher)
- Chili 63C, Soup 71C
- Bacon 62C, Chicken 66C
- Potato wedges 67-73C
- Quats sanitizer present at 3 compartment sink. Concentration was 200ppm. Staff knowledgeable about manual warewashing procedures.
- Wiping cloths stored in Quats solution (200ppm)
- No signs of pest activity noted at the time of the inspection. Pest Control contract in place with monthly service. Report provided and reviewed. Ensure recommendations of Pest Control Technician are followed.
- One staff member on duty has completed Foodsafe level 1. Ensure there is always one staff member present who has completed Foodsafe level 1 or equivalent.
*Ensure garbage/crates/cardboard do not accumulate outside door so that pests are not attracted to this area.Take to garbage/recycling area immediately.
