Observation (CORRECTED DURING INSPECTION): Hot-held samosas and pizza were at 55C inside the pizza warmer unit.
Corrective Action(s): Samosas were voluntarily discarded by the operator. Pizza was run through the pizza oven once again, and placed back into the warmer unit. (Prior to placing pizza back into the oven, unit was adjusted to reach an ambient temperature of 60C.)

Observation (CORRECTED DURING INSPECTION): 1. Can opener was visibly soiled in upstairs kitchen.
Corrective Action(s): 1. Can opener was cleaned and sanitized during the inspection. Remember that can openers are also food contact surfaces, and will contaminate food inside cans if it is not routinely cleaned and sanitized.

Observation (CORRECTED DURING INSPECTION): 1. Green peppers and cheese inside the walk-in cooler were not covered with a lid.
2. Chopped parsley left to dry in dishpit area
Corrective Action(s): 1. Appropriate lids were placed in the green peppers and cheese containers.
2. Chopped parsley moved to food preparation area. Do not store food items in the dishpit area - this subjects them to potential contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: 1. One deceased mouse found in trap located inside the electrical room.
2. Mouse droppings were noted underneath the stainless steel prep table where the buckets for dry storage goods are stored.
3. Mouse droppings noted in the crevice area to the right of the dry storage space.
Corrective Action(s): 1. Call your professional pest control company to remove the mouse and reset traps.
2. Remove all mouse droppings with 1 part bleach, 9 parts water and saturate with bleach for 15 minutes. Remove promptly and dispose of in garbage receptable. Call your professional pest control company to discuss on further reinforcing any holes left by pipes behind the walls, and to continue monitoring for pest activity.

Routine inspection conducted. The following observations were made:

DOWNSTAIRS:

1. Temperatures
- Walk-in closet cooler at 3C
- Dessert sweet cooler at 4C
- Stand-up freezer at -20C
- Beverage coolers at 4C or below
- Pizza hot-holder at 55C (initially), adjusted to 60C (see violation code above)
- Pizza prep cooler at 2-3C (top and bottom)
- Temperature logs up-to-date, except pizza hot-holder temperature is not regularly monitored. Ensure that you take temperatures for the pizza hot-holder unit

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels in food preparation area and restroom
- Bleach spray bottle at 200 ppm chlorine residual
- 3-compartment sink set-up for washing, rinsing, sanitizing, and air-drying
- Employees wear gloves as needed and wash their hands afterwards

3. Storage
- Food products stored at least 6" off the floor

4. Pest Control
- Professional pest control company conducts routine audits
- Last inspection was on April 27, 2019. Company states that low mice activity was noted in storage area underneath stairs
- Pest control company has been called again and will be arriving tomorrow morning

5. Administrative
- Permit posted
- Operator states that permit fee was already paid to the billing department
- Operator has taken FoodSafe 1 (Expiry: January 19, 2024)

UPSTAIRS:

1. Temperatures
- Walk-in cooler at 4C
- Prep cooler at approximately 3-4C
- All chest freezers at -18C or below

2. Hygiene and Sanitizing
- Hand wash sink stocked with hot/cold running water, liquid soap, and single-use paper towels
- 3-compartment sink ready for washing, rinsing, and sanitizing. 3rd compartment filled with 200 ppm chlorine residual solution
- Ventilation canopy in good sanitary condition

3. Storage
- Raw food products stored underneath cooked items in walk-in cooler. General organization satisfactory
- Food products covered when not in use
- Ice wand in chest freezer covered with food-grade freezer bag - good! Ice wand is used to cool down stews (e.g. chickpea)

4. Pest Control
- Pest activity has decreased; however, there is still an active, ongoing infestation. Ensure that you sweep up and mop debris every day, and keep your area in good sanitary condition. Work with your pest control company to eliminate any entranceways, such as holes inside walls. There are still rodent droppings behind the wall between the kitchen and the dry storage area (see violation code 304 above)

A follow-up inspection will be conducted to assess for general sanitation, temperature control, and pest management.
