Observation (CORRECTED DURING INSPECTION): QUATS dispenser line not dispensing sanitizer at start of inspection.
1. Sanitizer line is dispensing pot cleaner detergent

2. Detergent line is not under water level of sanitizer, resulting in only water being dispensed from wall mount dispenser.

3. Sanitizer measured 400+ ppm QUATS

**Corrected during inspection** Facility has switched temporarily to using bleach sanitizer: mix 1 tablespoon (cap) unscented bleach to 1 gallon water.
Corrective Action(s): 1. Switch dispenser lines so wall dispenser is properly using the correct chemicals.
2. Make sure sanitizer is dispensed with test strips.
3. Contact wall dispenser technician to replace lines; Detergent appears to be gel-like and facility was unable to have dispenser work while on site.

Routine inspection conducted
Exterior gas burners observed under a closed canopy. Staff stated this was for tea and veg pakoras, used ~3-4 times a year.
New range hood installed in front of walk-in cooler.

Temperatures:
Upright freezer (Beverage-air): Locked; no access as only chef has keys
Upright cooler (Beverage-air): 4.0°C
Walk-in cooler: 1.4°C
Walk-in cooler (Outdoor): 2.8°C

Sanitation:
Handwash station equipped with hot/cold running water, liquid soap, paper towels, and garbage receptacle.
QUATS sanitizer measured ~400ppm by end of inspection, not available from dispenser at start of inspection

2 compartment sinks equipped with hot/cold running water.
Overall sanitation of facility at time of inspection adequate.

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.
Facility keeps limited food in all storage areas to prevent overstocking
Food products randomly inspected found to be within best before date.
