302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Food contact surface sanitizer not readily available for immediate use at time of inspection.
2. Bar glasswasher had no detectable sanitizer in the rinse residual.
Corrective Action(s): 1. Spray bottles were filled with food contact surface sanitizer and tested at 200 ppm quats. Ensure sanitizer is always available during operations in the bar and kitchen areas, and maintained at safe and effective concentrations for food contact surfaces (e.g. 200 ppm quats, in spray bottles and/or in buckets with wiping cloths). Verify with test strips. Change sanitizer as often as necessary to maintain effective concentrations. Ensure all surfaces are properly cleaned and sanitized, and sanitize throughout the day as required to address potential contamination.
2. Ensure bar glasswasher is capable of sanitizing glassware (e.g. 12.5 to 25 ppm iodine, 50 ppm chlorine in rinse residual). Do not use the bar glasswasher until it is capable of sanitizing glassware and is reinspected by the Environmental Health Officer. Refer to violation 209 for additional action.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1. Bar handwashing station and preparation area handwashing station lacked paper towels at time of inspection.
2. In addition to paper towels, a towel was observed hanging in the men's staff washroom near the hand sink.
Corrective Action(s): Ensure all hand washing station are accessible and supplied with hot and cold running water, liquid soap, and single use paper towels at all times in order to facilitate proper hand washing. Do not use cloth towels for hand drying as they may potentially recontaminate hands.
Remove cloth hangers from the washrooms. Date to be corrected by: September 28, 2023.

Observation (CORRECTED DURING INSPECTION): 1. Raw animal product (raw meat) stored above ready-to-eat food (parsley).
2. Bar glasswasher sanitizer line observed to be connected to a chemical that is not intended for food contact surfaces.
Corrective Action(s): 1. Ensure raw animal products such as raw meat and eggs are not stored above ready-to-eat foods. Raw animal products may potentially contain pathogens and may drip onto, and contaminate food below. Ready-to-eat foods may not be subject to a cook (kill) step to address any potential contamination. Parsley was discarded.
2. Above-noted chemical jug disconnected from glasswasher. Glasswasher to be serviced, line replaced, and appropriate sanitizer intended for food contact surfaces (e.g. iodophor or chlorine) to be connected as per manufacturer specifications. All glassware on the premises to be immediately re-washed and sanitized in the kitchen's high temperature dishwasher prior to use.

Observation: Sandwich cooler located at cook line, near entrance to bar, measured at an ambient temperature of 7 degrees C. Note: Cooler was recently filled with food.
Corrective Action(s): As temperature did not drop to 4 degrees C or less during inspection, have cooler adjusted or serviced as necessary. Ensure cooler is capable of maintaining food at 4 degrees C or less prior to food storage. Date to be corrected by: September 28, 2023.

Observation: Spray bottles containing chemicals were observed to be unlabeled.

Reviewed procedures for donair (shawarma) meat. Cones prepared daily. Secondary cook step in use. No leftover cones.
Cooling procedures reviewed. Shallow containers available to facilitate rapid cooling of food.
Dry food storage areas well maintained. Food is properly covered.
High temperature dishwasher measured 73 degrees C at the utensil surface during the final rinse (required: 71 degrees C or more at the utensil surface).
Quaternary ammonium compounds (quats) sanitizer dispenser is dispensing at 200 ppm quats. Dispenser located at 2-compartment warewashing sink.
Equipment (including ice machine) observed to be in sanitary condition.
No signs of pest activity were observed at the time of inspection.
