Observation: Three of four sinks in the front service area have been previously designated as dump sinks and were not equipped with liquid soap or paper towels. Only one designated hand washing sink available in the front, at the very corner.
Corrective Action(s): A hand washing station must be easily accessible to all staff in each area. Dump sinks must still be equipped with liquid soap and paper towels in dispensers.
Install and/or fill soap and paper towels dispensers at each dump sink.
Correct by: 2 days.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris/grease accumulation noted in the following areas:
- top of dishwasher
- baker's station; behind equipment
- handles of coolers/freezers
Corrective Action(s): Ensure deep cleaning and sanitizing occurs at least once a week. High-touch surfaces (such as equipment handles) must be cleaned and sanitized frequently throughout each day.

Observation: Paper towel dispenser in staff washroom was not in use. Staff stated it has not been working properly.
Corrective Action(s): Repair or replace the paper towel dispenser. A roll of paper towel was available on top of the dispenser for use in the meantime.
Correct by: 2 days.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Broken floor tile near mop station/back door.
Corrective Action(s): Replace broken tile. In the meantime, ensure to thoroughly dry in/around this tile to remove any pooling water.

Comments

- One hand washing sink in the front and one hand washing sink in the back area properly supplied with hot and cold running water, liquid soap, and paper towels. As noted above (see violation 401), coffee dump sinks must still be supplied with soap and paper towels in dispensers.
- Coolers measured 4C or colder.
- Freezers measured -18C or colder.
- Hot-held food items measured 60 or hotter.
- Eggs held at room temperature at egg station were properly time-tracked. One-hour hold.
- Food storage practices satisfactory. All food stored off the floor, properly labelled, covered/protected from contamination.
- Quats sanitizer solution available at 200 ppm in sanitizing pails and from dispenser. Solution changed every 2 hours.
- In-use utensils stored in ice water, properly time-tracked. Washed and sanitized every 2 hours.
- High-temperature dishwasher reached 76C at the dish surface during rinse cycle. Good - minimum of 71C at the dish surface required.
- Temperature records available (digital).
- Pest control in place. No signs of pest activity noted at time of inspection.
- Staff onsite had valid FoodSafe certifications (or equivalent).
