Observation (CORRECTED DURING INSPECTION): Manual vegetable slicer was found to have dried tomato and tomato seeds on the blades. Slicer was also found to have a large number of fruit flies on the slicer.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized after each use to prevent potential contamination of foods and to prevent the attraction of flies. Slicer was washed and sanitized at the time of inspection.

Comments

-Facility is only operating the drive thru section as a result of the COVID-19 Pandemic. The dining room portion of the kitchen is currently not in use.
-Walk-in cooler was at 3C.
-Walk-in freezer was at -18C.
-Sandwich prep cooler was at 4C.
-Under counter coolers were at 4C.
-Milk dispenser cooler was at 4C.
-Front milk cooler was at 4C.
-Hot holding was greater than 60C.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm.
-Sanitizer pails were at 200ppm. Solution changed every 2 hours - containers are time stamped.
-Beverage spoons stored in ice water.
-General food storage practices good at the time of inspection.
-Foods stored off the ground and protected from contamination.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-Washroom supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Manager has FOODSAFE Level 1 Equivalent (Advanced FST 3rd Edition valid until May 26 2020).
