* Noticed boxes of produce ( red & yellow peppers) on the floor in walk-in cooler near totes containing raw chickens.
To prevent any chances of cross contamination, ensure all produce is stored either above raw poultry items or on the opposite shelf at least 6 inches off the floor.

* Quats sanitizer (Sani Q) from the dispenser tested 400 ppm. ( High). Adjust the Quats strength to 200 ppm as recommended by the manufacturer.
Discussed the importance of changing gloves between tasks (e.g. between handling raw chicken and touching dishes or produce etc).

Walk-in cooler at 2.5 degrees C.
Walk-in freezer below -18 C.
Preparation cooler at or below 4 degrees C.
Drawer coolers underneath the grill < 4 C
Beverage cooler at 2 degrees C.
Liquid soap and paper towels available at the hand sink.
Dishwasher final rinse: 50 ppm at the plate surface.
