Observation (CORRECTED DURING INSPECTION): Cooked tandoori chicken in plastic tub inside the walk in cooler internal food product temperatures 8-11 degrees C. Operator stated they were cooked last night, cooled on the counter then placed in plastic tub inside the walk in cooler.
Corrective Action(s): Discarded. Ensure all foods are cooled properly. Cooled from 60 to 20 degrees C in 2 hours then from 20 to 4 degrees C in 4 hours. Cool tandoori chicken by slicing into smaller portions and placing on shallow pans. Place in area of walk in cooler with good air circulation.

- Scoops and other dispensing utensils observed stored directly in dry food products.
Corrective Action(s):
- Store all processed vegetables in food grade containers with tight fitting lids.
- Store all scoops and other dispensing utensils outside of food products and in a sanitary manner at all times.

Preparation cooler inserts and lower section at 4 degree C.
Beverage cooler at front at 4 degrees C.
No pizza hot held in hot holding case at time of inspection. Temperature setting above 60 degrees C.
Freezers at or below -18 degrees C.
