Observation: line cooler behind the fryers holding tmeperature at ~8C. All potentially hazardous food are being stored for 2hrs and discarded. Logbook available and time tracked. Repair person already contacted.
Corrective Action(s): Ensure unit is fixed before storing cold potentially hazardous food in the unit for greater than 2 hours. Fix the line cooler to ensure temperature of <4C is reached.
