302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No bleach sanitizer found onsite, spray bottles were empty. Repeat. Buckets storing the wiping clothes were used to soak the clothes before wash; wiping clothes are not reused.
Corrective Action(s): Directed staff to mix bleach sanitizer immediately. Always ensure there is 100ppm bleach sanitizer used on food contact surfaces. Discussed with staffs the importance of using sanitizer on food contact surfaces as food are meant for public, standards differ from home. Further repeat of this infraction may result in enforcement action.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Observed a staff wash hands at three compartment sinks and then dried hands using pink towel hung on the wall.
Corrective Action(s): Use the handwashing station adjacent to the triple sink to wash hands. Use paper towels to dry hands only. Towel removed.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Used aluminum can (tomato cans etc.) were used to store chocolate ganache. Can was warm and sitting on stove. Inquired staff who informed that the ganache gets melted over a different bowl but transferred into used can. 2) Profiteroles and pastries were storedin cardboard boxes and styrofoam boxes directly.
Corrective Action(s): 1) Please use food grade containers to store food directly as these aluminum cans are not meant to be reused. 2) Place a food grade plastic or paper to line the boxes or bag the baked products as these boxes cannot be cleaned properly.

Observation: Wooden shelves in walk-in freezer is starting to be moist and rough.
Corrective Action(s): Please resand and relaminate the wooden shelves. If the shelves cannot be used anymore, replace with smooth, durable and non absorbent shelves (does not have to be wood).
