Observation (CORRECTED DURING INSPECTION): Wiping cloths were being stored on counter tops when not in use, at room temperature. Germs can multiply on the cloths.
Corrective Action(s): Store all wiping cloths in buckets of sanitizer when not in use. The sanitizer solution shall be changed very 2-4 hours with new solution. Retrain staff to follow this practice at all the bars and kitchens. During the inspection, staff started putting cloths in buckets of sanitizer.

Observation: Expire decal (Mar. 31/22), premises is operating without a valid permit. Hand delivered outstanding permit fees letter.
Corrective Action(s): Immediately pay the fees. Failure to do so will result in the closure of the premises until payment is received in full.

Observation: Found broken, cracked, chipped, or melted food container, lids and utensils. Pieces of plastic or metal could fall into food, and germs can grow and multiply in the cracks.
Corrective Action(s): Inspect all food containers, lids and utensils on a daily basis. Discard all damaged items and purchase new ones.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): Unlabelled spray bottles found, containing chemicals/sanitizer. This is unsafe as staff my assume it is a food item and use it to process food. Patrons could become ill after consuming the food.
Corrective Action(s): Immediately place a label, or write on the container what the contents is. Retrain all staff to do this.
During the inspection, staff wrote on the spray bottle.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temps recorded 2x daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles was 200ppm strength.
- High temperature dishwasher (multi-tank conveyor) had a rinse cycle temperature of 69.9C at the plate's surface, as per max/min thermometer. This is adequate for sanitizing, as the Food Code states a minimum of 66C at the plate's surface (rinse cycle) is required to achieve sanitization for this style of machine.
- All surfaces are in good working order.
- General sanitation level is good. Exhaust canopies commercially cleaned in June 2022, and next cleaning schedule in Septemeber 2022.
- No signs of pests.
- FoodSafe certified staff present.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below or separate from RTE foods; and foods stored 6" off the floor on racks, shelves, or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Foodsafe certified staff present.
