Observation (CORRECTED DURING INSPECTION): - Handsink adjacent to two compartment sink inaccesible for use as items were stored in basin. Additionally, paper towel dispenser was empty.
Corrective Action(s): - Remove items from handsink basin - corrected. Ensure handsinks are always available/accessible and adequately stocked for handwashing.

Observation: - Mouse droppings noted alongs edges of floor in various areas of the food premises including:
- along wall where ice machine is located
- behind line cooler
- staff area
- in storage closet
Corrective Action(s): - Pull out moveable equipment and thoroughly clean edges of floor to remove mouse droppings and then sanitize areas.
- Monitor areas for any additional rodent activity to establish if current issue. If additional droppings are present, clean up droppings promptly and sanitize area and notify Pest Control Technician as additional control measures may be required.
- Continue to maintain regular service with pest control company and follow recommendations of Pest Control Technician. Provide copy of most recent pest control report to Environmental Health Officer.

Comments

- Handwashing sinks at cooking line and in beverage area were supplied with liquid soap and paper towel
- Coolers and freezers were operating at required temperatures (4C or colder; -18C or colder):
- 2 door worktop cooler 2C
- Line cooler 2C
- Drawer freezer -20C
- Single door worktop freezer -19C
- Walk-in cooler #1 0-1C
- Walk-in cooler #2 2C
- Beverage cooler 3C
- Cooked rice 70C
- Temperature of coolers, freezers and dishwasher are checked twice daily. Records checked and appeared complete and up to date.
- Ice machine appeared clean/maintained. Ice scoop was stored in sanitary manner outside ice bin.
- High temperature dishwasher was operational and met required sanitizing temperature. Final rinse was 78.2C at dish surface.
- Chlorine bleach solution (200ppm) present for in use wiping cloths.
- Quats sanitizer solution (200ppm) present in spray bottles and used for customer tables.
- Staff/public washrooms maintained with liquid soap and paper towel for handwashing
- Aside from presence of mouse droppings on floor and accumulation of dust on ceiling/wall noted in violations above, sanitation of premises was satisfactory.
- Assistant manager present and has completed Foodsafe level 1. Certificate present on-site.

Observations and required corrective actions were reviewed with Assistant Manager and a copy of the report was provided.
