Observation (CORRECTED DURING INSPECTION): *This is a repeat violation* (1) Mandolin was observed with dried on food debris, and (2) Grated cheese particles along with a small cube of partially grated hard cheese was observed on the blender attachment. Blender attachment was stored on the clean storage rack.
Corrective Action(s): Items placed into dishwashing area to be properly cleaned and sanitized. Ensure that all equipment/utensils/food contact surfaces are maintained in sanitary condition to limit the potential contamination of food.

Follow up to Rpt # MBEK-B5KRPX.

- Low temperature under counter dishwasher (located in bar area) was measured at 49 degrees C and 50 ppm chlorine in rinse residual at utensil surface. Note: Monitor sanitizer jug and change as necessary. Monitor sanitizer level at the utensil surface with chlorine (hypochlorite) test strips. Minimum required: 50 ppm.
- Under counter cooler drawers in oyster bar measured 4 to 5 degrees C at time of inspection (internal food temperature)
- Bins for storage of utensils maintained in sanitary condition. Most utensils and equipment in sanitary condition. Refer to violation for exceptions.
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Ice machine knob has been tightened; screw/bolt on interior of door is no longer loose. Ice machine interior ice contact surfaces in sanitary condition.
