Observation: 1)Knives stored in between counter and equipment and equipment and wall. This is not a clean location.
2)Mold/mildew noted in ice machine bin
Corrective Action(s): 1)Store clean dishes in a clean location.

Observation: Small handwashing station near ice machine area was filled with miscellaneous items and obstructed by mixer. No liquid soap present either.
Corrective Action(s): Remove all items from inside sink, remove mixer from in front of sink and supply liquid soap. This is a designated handwashing station and needs to be equipped for handwashing. Correction date: Oct. 14/17

Observation: Mouse droppings noted in the following areas:
-behind chest freezer
-under dishwashing sink
-on top of dishwasher
-under small handwashing sink
Corrective Action(s): Immediately clean up all droppings and sanitize areas. Remove all moveable items from the floor and store on shelving or in cabinets. Keep floor clear to facilitate cleaning and monitoring. Continue to monitor and immediately clean up any droppings. Retain a pest control contract with a qualified Pest Control Technician to provide service to address mouse issues. Follow recommendations of the Pest Control Technician. Keep copy of pest control contract on report on-site to provide at follow up inspection. Correction date: Oct. 17/17

Comments

-Hot water, liquid soap and paper towel present at sink adjacent to blast freezer and in .
-All coolers were 4C or colder
-Freezers were functioning
-One staff member present had Foodsafe level 1 training.
-Bleach present for sanitizing food contact surfaces
-High temperature dishwasher met sanitizing temperature requirements. Final rinse was 76.9C as measured with min/max thermometer.
*Foods in walk-in cooler must be covered with lids or food grade wrap. Do not use garbage bags.
