Observation (CORRECTED DURING INSPECTION): Sanitizer (quaternary ammonium) in buckets used to store wiping cloths in the food prep area was found to be below 200 pm. Ensure sanitizer is regularly changed (at least every 2 hrs or as required) to maintain minimum concentration of 200 ppm to adequately sanitize food contact surfaces.

Observation: Build up of debris and grime found along base board of floors and behind and underneath cooling line equipment. Ensure all areas are properly cleaned and sanitized on a regular schedule to remove build up of debris/grime and maintain sanitary condition.

Cold holding units were 4 C / 40 f or colder

Pest control in place - update pest control to prevent harborage of flies.
