Observation: 1. Paper towel dispenser located above prep area.
2. Trays of pizza dough stacked on top of another without any liner.
Corrective Action(s): 1. Re-locate paper towel dispenser so that water is not dripping onto food when staff are trying to dry their hands.
2. Do not stack food on top of another without lids or food-grade covering.
Correct immediately.

Observation: 1. Accumulation of dry flour in corner with all the wires.
2. Dust and debris behind equipment.
Corrective Action(s): 1. Remove flour accumulation. To keep area clean, suggest finding a way to cover exposed wires.
2. Clean facility so that it is visibly clean focusing on areas that are behind and underneath equipment.
Correct by March 11, 2022.

Routine Inspection

-Walk in cooler below 4 C.
-Prep cooler and inserts below 4 C.
-Both chest freezers at -18 C.
-Hot holding unit above 60 C.
-Front and hand washing sinks equipped with hot/cold running water, liquid soap, and paper towel. Location of paper towel for back sink not ideal during food prep. Re-locate closer to sink (see above violation).
-Surface sanitizer (bleach solution at 200 ppm) available.
-Manual dishwashing set up properly - sanitizing compartment filled with 200 ppm bleach solution.
-Permit to Operate posted.
-FoodSafe requirement met at the time of inspection.
-Temperature records available for review.
-Pest records available for review.
