Observation: The dishwasher rinse was 63 degC at plate level after 3 tries. This is too low. The rinse temperature must be 180 degF at the manifold but it only went up to around 133 degF according to the reading on the dishwasher.
Correction: Get the dishwasher fixed. Until then, sanitize dishes in sink as discussed.

-Dishwasher has been fixed. Rinse temperature is 77 degC at plate level. Ensure that staff are monitoring the dishwasher temperatures daily.
