Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher for utensils and equipment was not dispensing any sanitizer at the time of inspection. After calling a technician the dishwasher was able to achieve 50ppm Chlorine.
Corrective Action(s): Ensure the dishwasher is regularly tested to ensure the correct sanitizer concentration is dispensing at all times

1) Under both cook line areas. Both areas have excessive oil build-up

3) General hard to reach areas (under dishwasher and around perimeter)
Corrective Action(s): Ensure all areas are cleaned and sanitized. Recommended to increase frequency of cleaning in these areas.

All cooler units are at or below 4C
All freezer units are at satisfactory temperatures
Low temperature dishwashers are achieving appropriate Chlorine concentrations (100ppm cutlery/dishware dishwasher and 50ppm utensil/equipment dishwasher)
Food contact surface sanitizer is satisfactory
Dry storage is good. Food is off the floor and covered
No signs of pest activity. Kwality pest control contracted monthly
