301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 2 cleaned knives noted wedged behind the front 3-door cooler unit and wall for storage.
Corrective Action(s): Hard to clean and sanitize the area behind the cooler unit and wall therefore cannot guarantee that the knives are cleaned when stored in the area after cleaning. **Issue corrected during the inspection** Staff moved the knives from behind the cooler and was instructed to wash and sanitize the knives prior to storing at another sanitary location.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Some food (e.g. containers of pasta and cooked chicken wings) were stored uncovered in the walk-in cooler.
2. Light fixture nearby the cash register still noted with exposed light bulbs.
3. One bulk food container (flour) still noted using an improper dispenser (bowl) - store and used in bulk food.
Corrective Action(s): These are not new violations. All are violations were that previously cited during the last routine inspection.
Operator must take actions.

1. Place a lid or plastic wrap over all food that are intended for prolong storage (e.g. more than couple hours) in the walk-in cooler. Food must be stored protected to avoid potential cross-contamination.
2. Buy light shield for the fixture missing the shield.
3. Remove the bowl and purchase appropriate dispenser for staff to use.

304 - Premises not free of pests [s. 26(a)]
Observation: Lots of flies noted in the back room (near the meat slicer) and dishwashing area.
Corrective Action(s): Clean any clutter or debris noted in this area and remove any stagnant water to avoid the harbourage of flies. Continue to work with your pest control company to address fly issue.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General sanitation for the facility has improved, however the following areas still needs to be cleaned and sanitized.
1. Food soil noted on the door gasket/ seal of the front 3-door cooler unit.
2. Dried on food soil noted on the door handles of the back (by the oven) 3-door cooler unit.
3. Heavy dust and grease/ grim builup noted on the fan unit above the oven.
4. White organic buildup on the shelves in the walk-in cooler.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time after cleaning.
Note: As per supervisor, the fan unit above the oven is scheduled for cleaning in a couple weeks from now. This unit will be accessed during the next routine inspection, 4 months from now.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Premises was approved based on the requirement that all equipment and surfaces must maintain in a condition that is easily cleanable and in good repair. Tears and torns noted on the door gaskets/ seal of the back (near the oven) 3-door reach-in cooler, noted in a condition that is not easily cleanable and sanitize anymore.
Corrective Action(s): Replace the broken door gaskets/ seal at the 3-door cooler unit.

Comments

Routine inspection conducted today:
Handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were noted at 4.0C or below.
Freezer units (including the one in the external storage room) were noted at -18C or below.
Chlorine spray bottles were prepared and available throughout the premises. 4 spray bottles were tested and all noted with 200 PPM chlorine residual - excellent.
Drain plugs available for the 3-compartment sink.
External storage area inspected - No signs of pest noted in this area. Area mainly for dry good. One chest freezer was also noted in this room.
Supervisor's FOODSAFE level 1 equivalent certificate verified.

Food handlers must continue to be vigilant in keeping the sanitation of the facility and practicing proper food safety practices but overall improvements definitely noted.
