Observation (CORRECTED DURING INSPECTION): Noted 4 containers of broths with ice wands stored in them on a 2 inch pallet in the dry storage area.
Corrective Action(s): The dry storage area is not a processing area. Cooling of the foods should be done in the main food preparation/handling area (ie. kitchen). All foods should be stored off the floor (ie. foods being processed should be stored on counters). In order to accommodate advanced preparation of the broths, the premises should be doing this on the Tuesday with shorter operational service hours.

Comments

Follow up inspection conducted to verify outstanding infractions from previous routine inspection have been corrected:
- No potentially hazardous foods stored at room temperature
- Small refrigerator beside cookline has been removed. Floor plans were submitted to add a small prep cooler across the cookline beside the existing larger prep cooler which accommodates the ingredients for the salad rolls as well as the items in the small previously added refrigerator.
- All sanitizer solution in the premises 200ppm (source, containers with cloths submerged and spray bottles). No wiping cloths were stored on the counters.
- Required cleaning has been completed. Continue to maintain a high level of sanitation.
- All stored foods were in food grade containers. No garbage bags or grocery bags were being used to store foods.
- Hand soap dispenser at hand sink beside ice machine has been remounted on the wall.
- All hand wash stations were accessible. Operator's submitted floor plans and obtained plumbing permits to relocate the hand sink in the middle of the kitchen that was installed in the counter so that it is now free floating beside the prep cooler as it was previously prone to being covered/blocked by staff. Hand sink had hot and cold running water, soap and paper towel and was fully accessible/unobstructed.
- Operationally the premises has reduced their hours on Tuesday and will use that time to advance prep their spring rolls and broths (see violation code 209) to minimize food handling during operational hours (ie. to focus on preparing foods for immediate service during operation).
- Other operational additions to the premises that were made by the operators to promote more convenient/safer food handling include: shelving along the wall across the walk in cooler, small rolling racks to prevent staff from storing food on crates, sliding two door cooler unit in the dry storage room, large multi-tier rolling rack for cooling/storing of spring rolls.
