Routine inspection conducted and the following were noted:
All cooler units were less than or equal to 4C.
Walk-in freezer less than -18C.
Hot holding of foods greater than 60C.
All food items stored at least 6 inches off the ground and properly covered.
Operator has an on-going monthly contract with pest control company. No pest activity was noted on Jan 2020 report and no pest activity was noted at the time of inspection.
High temperature dishwasher achieved a final rinse temperature of 72C at plate level.
Hand washing stations satisfactory.
Quats solution available in all food preparation areas and concentration was at 200ppm.
Quats dispenser at 200ppm.
Ice machine was clean.
