Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: - Sanitizing buckets or Spray bottle Sanitizer were not provided for Sanitizing food Contact Surfaces.
* Wiping clothes abandoned on food Contact table without Sanitizing.
* Three Compartment dishwashing Sink had no prepped sanitizer therein, Operator Observed washing dishes without Sanitizing. Operator lacked basic knowledge for setting up three Compartment dishwasher.
Correction: - Set up sanitizing buckets with appropriate Sanitizing Concentration of 100ppm bleach solution
* Have wiping clothes fully immersed in bucket Sanitizer when not in use.
* Have three compartment Sink Set up in appropriate order prior to dishwashing cycle.
NOTE: - Three Compartment sink dishwashing Signage reviewed with Operator.

*Due to current covid situation inspection report is written off-site but inspection report was discussed with staff on-site prior to leaving*
**Inspection report will be emailed to operator at this time and no signature is required**

The following items have been corrected since last inspection:
-->Discussed manual dishwashing procedures with staff. Bleach is used to sanitize all dishware. Recommended staff to make a sanitizing sink first thing in the morning.
-->Bleach sanitizer test strips purchased and available on-site to check sanitizer concentration
-->Bleach sanitizer in bucket will also be available at all times
-->Covid-19 Safety Plan in place - A copy is available on-site; a plexiglass barrier is added by cashier; sanitizer is available; signs posted; floor markings noted; Chlorox spray available for frequent cleaning.

Closure order rescinded. Facility is given approval to re-open. Ensure operator is adhering to what's written in their Covid-19 Safety Plan.

Still outstanding:
-->Ensure all food products are stored at least 6 inches above ground to facilitate cleaning and for pest monitoring. Correct by Monday, July 27, 2020.
