Food not cooled in an acceptable manner [s. 12(a)] ( Deep inserts with sliced cooked potatoes are pulled out of oven and cooled on the counter at room temp for 20 minutes then placed in the walk in cooler for additional cooling. Potato insert cooling on table noted at 54 C with probe thermometer.)

Follow-up to report # ZDER-AW9UXF, ZDER-AWQ2C3 and ZDER-AX8TND.
-1 page FSP for Potatoes, 1 page basic SP provided to Fraser Health - not satisfactory FSP & SP for operating premises.
-FSP for all food products on menu required
-SP for all equipment, utensils and surfaces required with sanitizer, chemical names and concentrations. Clean schedule required.
-Copy of "food establishment package" has again been provided to owner via email to assist with development of a complete FSP & SP.
-Reviewed rapid cooling methods with operator - methods must be included into FSP for potatoes and any other hot food requiring cooling including cooling temp logs..
