Comments

- Hot water, liquid soap and paper towels available for hand washing
- Chlorine sanitizer available in spray bottle. Chlorine concentration is too strong. 100ppm chlorine (1teaspoon bleach per 1L water) is required for safe use in food premises.
- Discussed rinsing & sanitizing protocol for shakers, blenders and other utensils. Utensils are rinsed after each use and sanitized at the beginning & at the end of each day. Ensure that they are sanitized every 4 hours during operation.
- Temperatures of refrigeration units are adequate (<4C coolers, <-18 freezers)
- Observed single use containers being washed & dried on the rack. Do not re-use single use containers. They need to be re-cycled.
