Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Mayonnaise labelled "Refrigerate After Opening" was stored at room temperature and Kimbap was stored in a cooler ranging from 8C to 12C.
Correction: Potentially hazardous foods must be stored at or below 4C to prevent the growth of pathogens and/or the formation of toxins. Ensure the manufacturer's storage instructions are followed. Mayonnaise was placed in a cooler at 4C at the time of inspection. Kimbap was moved to a cooler at 4C.
Comments

-Follow-up inspection to July 11, 2023.
-Front kimbap cooler was replaced and was at 4C. Operator stated the compressor for the other cooler was not functioning properly. Ensure cooler temperatures are monitored and service technician is contacted as needed.
-Mayonnaise was in use at the time of inspection. Staff stated the mayonnaise is stored in the walk-in cooler when not in use.
-Hand hygiene/glove use practices were discussed with staff. Staff must change gloves between tasks and when gloves become contaminated.
-Foods were properly stored and protected from contamination at the time of inspection.
