302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Dishwasher still not dispensing sanitizer at the final rinse cycle. Chlorine concentration present in bucket, does not seem to be pulling into the machine. Corrective Action(s): Repair/replace machine as necessary. Date to be corrected by: Friday April 20, 2018. Until it is repaired, wash all equipment and utensils in the dishwasher, then manually sanitize by setting up a 100-200ppm (5mL of bleach in 2.5L of water or 1 tsp per gallon of water) solution in the adjacent sink. All equipment must be fully submerged in the sanitize sink for a minimum of two minutes. Manual warewashing diagram provided. Chlorine test strips provided to verify that sanitizer is at correct concentration in the sanitizing sink. Violation Score: 15
