Observation (CORRECTED DURING INSPECTION): Chopped cilantro and red onions observed to be stored under room temperatur for 1 hour.
Corrective Action(s): Store aforementioned food items in cooling unit able to hold an air ambient temperature of 4C or lower. No potentially hazardous foods are to be stored under room temperature for more than 2 hours.

Observation (CORRECTED DURING INSPECTION): Can opener blade and mounted vegetable dicer observed to have built-up of food debris. Ice cream scoop observed to be stored under water at room temperature and is cleaned and sanitized every 3 hours.
Corrective Action(s): Clean and sanitize the aforementioned equipment. Can opener blade and mounted vegetable dicer must be claned and sanitized after each use. Store ice cream scoop in well dipper.

Observation (CORRECTED DURING INSPECTION): No prepared approved sanitizer available in the kitchen area.
Corrective Action(s): Prepare approved sanitizer (QUATs) spray bottle to measure at 200ppm. Sanitizer spray bottles or buckets must be available in all food preparation areas.

Observation (CORRECTED DURING INSPECTION): All handwashing sinks in the kitchen and front area are lacking paper towels. Handwashing sink hot water faucet next to the preparation sink was also observed to turned off and obstructed with kitchen equipment (e.g.: wiping cloths, vegetable slicer).
Corrective Action(s): Ensure all handwashing sinks are well equipped with hot and cold running water, liquid soap, and paper towels. All handwashing sinks must be unobstructed to ensure proper hand hygiene accessiblity.

Observation: Food (desserts, chickpeas, chicken, etc.) observed in the prep coolers to be uncovered. Frozen chicken and chicken dumplings observed to be stored on the floor in the walk-in freezer.
Corrective Action(s): All potentially hazardous food must be stored with lids or wrapped with plastic food-grade wrap and stored at least 6 inches off the floor. Corrected by: Immediately.

Observation: Built-up of food debris observed to be underneath the gas stove and major cooking equipment.
Corrective Action(s): Clean and sanitized the aforementioned area. Follow Sanitation Plan. Corrected by: April 19, 2022.

Observation: Ice machine observed to have pooling of water and is turned off. Staff informed that the ice melts throughout the day when in use. Walk-in freezer observed to have ice build-up on the floor.
Corrective Action(s): Cease use of the ice machine. Service the ice machine, clean and sanitize the machine prior to use. Remove ice build-up on the floor in the walk-in freezer. Corrected by: April 19, 2022.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs spray bottle at the front serving area measured at 200ppm. 2-compartment sink with high-temperature dishwasher available. High-temperature dishwasher measured at 71.5C final rinse temperature. 1 preparation sink available.
Prep coolers and walk-in cooler measured at 4C or lower. Chest freezer and walk-in freezer measured at -18C or lower.

Outstanding concerns from previous report#254133 to be corrected by: April 19, 2022:
-Install QUATs dispenser near the mop sink.
-Submit corrections for Food Safety Plan.

NOTE: Purchase thermometer to ensure that food temperature can be monitored.
Purchase measuring cup to ensure proper dilution of QUATs as premises is currently manually dilution sanitizer by hand until QUATs dispenser is installed.
