Observation (CORRECTED DURING INSPECTION): Pizza in the pizza warmer measured with an internal food product temperature at 54 C. The operator stated the pizza in the warmer was cooked in less than 2 hours and any pizza cooked for more than 2 hours will be discarded.
Corrective Action(s): Adjust the temperature control or service the pizza warmer to ensure pizza are held at 60C or above. Alternatively, maintian a temperature log to ensure any pizza cooked for more than 2 hours are discarded. The operator adjusted the temperature control of the warmer and the temperature increased to 60C.

Observation: Pizza pans were stored in two cardboard boxes beside the pizza oven.
Corrective Action(s): Pizza pans must be stored in a container made from smooth, non-porous and easily cleanable material. Clean and sanitize pizza pans before switching to new containers. Correct by: Feb 5, 2019.

Routine Inspection:
- Walk-in cooler was at 2C.
- Prep cooler near the pizza oven was at 4C.
- Chest freezer was at -18C.
- Prep cooler near the dough mixer was not turn on and used as a dry storage area.
- Display cooler in the front area was at 2C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 100 ppm bleach sanitizer available in bucket with wiping cloth and 3 compartment sink.
- Dry food products stored off the ground.
- No pest activities observed.
- General sanitation satisfactory.
