209 - Food not protected from contamination [s. 12(a)] Observation: Significant condensation droplets noted on drip tray in display cooler. Significant frost build up on refrigeration lines in unit. Food (sandwiches) are being dripped on by these droplets. Corrective Action(s): The only way to protect the food in this unit from contamination of this nature is to wrap in plastic wrap. Properly and completely defrost this unit immediately. This unit must be frost free to effectively maintain proper cooling temperature through high traffic periods of the day. Recommend a scheduled full defrost at an interval that will prevent significant frost build up. Put it in the sanitation plan and commit to it. Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Area below the upright freezers and shelf adjacent to the dish sinks observed dirty. Handwash station by prep cooler out of paper towels. Napkins available, but ensure dispenser is checked daily by staff. Cooling units less than 4 C; Freezers less than -18 C. Dishwasher at 50 ppm chlorine. OK.
