Observation (CORRECTED DURING INSPECTION): - No chlorine residual detected on dishes after dishwasher rinse cycle. Dishes were not being effectively sanitized.
Corrective Action(s): - Dishes are to be manually sanitized in the warewashing sink until dishwasher is in good working order and capable of effectively sanitizing dishes.
- Plug present to fill sink. Chlorine solution and chlorine test strips present. Staff knowledgeable about sanitizing step and implemented manual sanitizing procedure at time of the inspection. This is only an interim measure until the dishwasher is repaired.

Comments

- General sanitation of premises was satisfactory
- Handsinks supplied with hot and cold water, liquid soap and paper towel
- All coolers were operating at 4C or colder
- Freezers were maintaining product in a frozen state
- Food protected from contamination. All food wrapped/covered
- Noted proper thawing procedures (in cooler)
- Reviewed cooling procedure with staff for gravy. Use ice bath and stir to ensure product cools rapidly.
- Quats sanitizer (200ppm) present in spray bottle to sanitize food contact surfaces and counters.
- Ice machine appears clean/maintained. Scoop stored in clean location outside of bin.
- No signs of pest issues noted at the time of the inspection
- Staff on duty have completed Foodsafe level 1. *Keep copy of certificate on-site for verification purposes.
- Permit to operate present and visible to the public.
